Banana Bread
Delicious and easy use for overly ripe bananas.
Cook time: 1 hr 5 minutes
Yield: 1 loaf
Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup butter
- 3/4 cup brown sugar
- 2 eggs, beaten
- 2 1/3 cups mashed overripe bananas
- 3/4 cup chocolate chips (optional)
Directions
- Preheat oven to 350F. Lightly grease a 9x5 inch loaf pan with parchment paper in bottom of pan.
- In a large bowl, combine flour, baking soda, and salt.
- In a separate bowl (or with a stand mixer), cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended.
- Stir wet mixture into dry mixture and add chocolate chips. Stir just to moisten. Pour batter into loaf pan.
- Bake for 60-65 minutes, until toothpick inserted into center of the loaf comes out clean. Let cool in pan for 10 minutes, then turn out onto wire rack.
