Beef and Broccoli

Ingredients
- 2 + 1 tablespoons cornstarch (divided)
- 1 lb. flank steak, cut into thin 1 inch pieces
- 1/2 cup low sodium soy sauce
- 3 tablespoons (packed) light brown sugar
- 1 tablespoons minced garlic
- 2 teaspoons grated ginger
- 1 + 1 tablespoons vegetable oil (divided)
- 4 cups small broccoli florets
- 1/2 cup sliced white onions
Directions
- In a large bowl, whisk 2 tbsp cornstarch with 3 tbsp water. Add the beef to the bowl and toss to combine.
- In a separate small bowl, whisk remaining 1 tbsp cornstarch with soy sauce, brown sugar, garlic, and ginger.
- Heat 1 tbsp oil in large pan. Once hot, add beef and cook until almost cooked through stirring consistently. Transfer beef to a plate and set aside.
- Add remaining 1 tbsp oil to pan. Once hot, add broccoli and sliced onion, stirring occasionally until broccoli is tender (about 4 minutes).
- Return beef to pan and add sauce. Bring to a boil and stir for 1 minute or until the sauce thickens slightly. Serve with rice or noodles.
Notes
- Broccoli can optionally be blanched to guarantee bright florets. Dry thoroughly before adding to pan. If this is done, reduce broccoli cooking time to 2 minutes.
- The sauce must come to a boil in order for the cornstarch to work as a thickening agent.
