Mac and Cheese
Nice, simple, rich mac and cheese.
Cook time: 50 minutes
Yield: 4 servings
Ingredients
- 8 oz. uncooked elbow macaroni
- 2 cups shredded sharp Cheddar cheese
- 1/2 cup grated Parmesan cheese
- 3 cups milk
- 1/4 cup + 2 tablespoons butter
- 2 1/2 tablespoon all-purpose flour
- 1/2 cup bread crumbs
- 1 pinch paprika
Directions
- Preheat oven to 350°F
- Cook macaroni to package directions. Drain.
- In a saucepan, melt 1/4 cup butter over medium heat. Stir in flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and sauce is a little thick.
- Put macaroni in a large casserole dish. Pour cheese sauce over macaroni and stir well.
- Melt 2 tablespoon butter in a skillet over medium heat. Add breadcrumbs and brown.
- Spread over macaroni and cheese to cover. Sprink paprika over top.
- Bake for 30 minutes.
