Sourdough
Simple, low effort sourdough recipe with consistent results. Make sure to have a fed and active starter before beginning.

Yield: 1 loaf
Ingredients
- 400, 500, or 600 g flour (for small, medium, or large loaves)
- 75% water (450 g for 600 g loaf)
- 15% starter (90 g for 600 g loaf)
- 2% salt (12 g for 600 g loaf)
Directions
- Mix all ingredients, bulk ferment 8-12 hours at room temperature. Fold every 1-4 times, 30 minutes in between folds
- Proof in fridge overnight
- Preheat oven with dutch ovens inside at 500°F for 1 hour
- Bake 20 minutes covered, 15-25 minutes uncovered.
